Prosperity Cookies / New Year Cookies

Happy New Year! Start this year off on a delicious note with these prosperity cookies! This recipe is a delightful and flavorful twist on the classic cinnamon crinkle cookie, enhanced with spices that help ring in your new year with luck. 

The luck-enhanced spices that are featured within this cookie are cinnamon – known for attracting prosperity, nutmeg – which brings luck, and ginger – known for bringing positive monetary energy.

Prep: 20 minutes

Rest: 1 hour

Baking: 14 minutes

Total Time: 1 hour 45 minutes 

Supplies Needed:

3 Bowls

Baking sheet

Measuring cups

(Suggested): Hand or Stand Mixer

Yeilds:

20 Cookies

Cookie Ingredients:

½ cup of softened butter

½ cup brown sugar

½ cup white granulated sugar 

1 egg

1 tsp vanilla

1 ½ cup of flour

1 tsp cinnamon 

½ tsp nutmeg

½ tsp ginger

1 tsp baking powder

Sugar Topping Ingredients:

½ cup of white granulated sugar

1 ¼ tsp cinnamon

Directions: 

In the largest bowl, cream together the softened butter and both sugars. Once combined, add in the egg and vanilla. 

In another bowl combine the flour, cinnamon, nutmeg, ginger, and baking powder. 

Slowly combine the dry ingredients into the wet ingredients, mixing in about ½ cup of dry ingredients at a time until dough is fully mixed. 

Cover dough and rest for about an hour. 

In a separate bowl mix together cinnamon and sugar to create the cinnamon sugar topping. 

Once an hour has passed, pre-heat oven to 350°F (~175°C).

Scoop about 1 tablespoon of dough and roll into a ball, roll the ball in the cinnamon sugar mixture and place on lined or greased baking sheet. Repeat until all dough is used. Do not discard extra cinnamon sugar. 

Bake for about 14 minutes at 350°F (~175°C).

Right out of the oven, about ¼ tsp of cinnamon sugar mixture on the still hot cookies. 

Let cookies cool on baking sheet for about 2 minutes before transferring to a cooling rack.
